I love pizza. I could probably close down the local pizza buffet with my ginormous appetite for pizza. I love pizza. It’s the whole reason I could never be a ballerina. Or a Victoria’s Secret model. Or a size two.
It’s all because I love pizza.
Anyhow. A farmgirl who loves pizza as much as I do eventually has to learn how to make it. Because honestly – how often does a farmgirl go out to eat? So here’s how homemade pizza works at Clucky Dickens Farm.
Homemade Pizza: The Crust
This recipe makes dough for one 12″ pizza or 8 mini pizzas.
1 tsp yeast
1/2 cup warm water or milk
1/4 tsp salt
1 Tbsp olive oil
1 1/4 cup flour
Let the yeast stand in warm water for five minutes. Add salt, oil and half of the flour. Beat for two minutes with a wooden spoon. Add the remaining flour and knead for 5 minutes. Lightly oil a bowl, set dough inside, and let rise in warm place for 1 hour. Punch down and let the dough rest for ten minutes. Roll out into crust on a floured counter or board – I’ve got my eye on one of these mini pizza rollers! Then put the rolled out dough on your pizza pan. Optional: sprinkle your pizza pan with a little cornmeal before you lay the dough on it. It’s the best.
Homemade Pizza: The Sauce and Toppings
If I’m out of our homemade pizza sauce (shh! We use Mrs. Wages Pizza Sauce Mix because it’s the best!), my sauce of choice is usually tomato paste, with a bit of sugar (to taste) to cut the acidity.
Sometimes, our toppings are whatever happens to be in the fridge. Have you ever tried a pizza topped with slices of leftover bratwurst, cheese, and fresh basil? Or how about a “Big Mac Pizza” – pickles, onions, ground beef, and cheese over a Thousand Island Dressing sauce?
Our go to pizza is usually sausage. Since we raise pigs here at Clucky Dickens Farm, we have no shortage of pork. Pizza night means we can use our homemade italian sausage!
To 2 pounds of ground pork, add: 1 tsp. black pepper, 2 tsp. parsley, 1 1/2 tsp. Italian seasoning, 1 tsp. garlic powder, 1 tsp. fennel seed, 1/2 tsp. paprika, 1 tsp. onion powder, and 2 tsp. salt. Mix thoroughly. For best results, mix this up the day before you’re going to use it so the flavors have time to meld.
No matter how you choose to top your homemade pizza, toss that baby in a 400 degree oven and bake ‘er up for 15ish minutes.
