I have a lot of favorite cookbooks that I use all the time. Because of this, it’s super fun when I find a new little gem hiding at an antique shop. I found High on the Hog: Hillbilly Recipes by Ella Mae Tucker a few years back and I’ve got to tell you—my favorite recipe from it is buttermilk pie.

So what in the world is buttermilk pie, anyway?

It’s awesome, that’s what it is. It’s so awesome that you will hear the sound of your internal vacuum sucking the entire pie right down to the bottom of your belly before you even realize what happened.

Okay, maybe that’s a little dramatic. I mean, who would do that?

Hillybilly Buttermilk Pie

Ingredients for Hillbilly Buttermilk Pie

Unbaked 9 inch pie crust
4 eggs, beaten
2 cups sugar
2 Tbsp flour
2/3 cup buttermilk
1/8 tsp salt
1 stick butter, melted
1 tsp. vanilla
Cinnamon

How to make Hillbilly Buttermilk Pie

Combine the eggs, sugar, flour, buttermilk, salt, melted butter, and vanilla. Beat until well mixed.

Turn into an unbaked pie shell…

and then sprinkle the top with cinnamon. Ain’t that lovely?

It’s a great idea to use a pie shield to keep the edges of your pie from burning. Also, if you find you have too much filling, you can always stick the extra in a small oven safe bowl and bake it up as a crustless pie.

Bake at 400 for 10 minutes. Then reduce the heat to 350 and bake additional 50 minutes until set.

You can test it just like a pumpkin pie. Gently stick a knife in the center of the pie. If it comes out clean, you’re all set!

Isn’t it a lovely pie? Somehow—through whatever magic happens in the oven—this pie ends up with a yummy crunchy topping. The middle almost tastes like (and has the consistency of) the filling of a coconut cream pie without the coconut.

Oh. And for anyone who turns their nose up at the thought of buttermilk…you’d really never know there was buttermilk in this.

If you find yourself with some buttermilk that needs to be put to use, I think Hillbilly Buttermilk Pie is a nice place for it to call home.

Hillbilly Buttermilk Pie

Have some extra buttermilk to use? This is a great pie to make!

Ingredients

  • 4 eggs, beaten
  • 2 cups sugar

  • 2/3 cups buttermilk

  • 1 - 9" unbaked pie shell

Instructions

1. Combine the eggs, sugar, flour, buttermilk, salt, melted butter, and vanilla. Beat until well mixed.

2. Pour mixture into an unbaked pie shell and sprinkle the top with cinnamon.

3. Bake at 400 for 10 minutes. Then reduce the heat to 350 and bake additional 50 minutes until set.

  • Oh darlin', I have to confess…even though I've lived on a farm all my long, long life I've never tasted 'buttermilk pie'. Whew, there…I feel better now! Heeehehehe!

    Shoot, we even had a dairy for years where I had access to all the buttermilk I wanted. What was I thinkin'??? I'll have to change all that soon and very soon.

  • Love that empty plate! 🙂 I agree with the ladies~I'd call that breakfast…but I'm on a personal campaign to make sure everyone starts the day with dessert first…well, I wasn't until I read this, but now I am! Yum!

  • Gotta admit the name "Buttermilk Pie" didn't do a lot for me but now with your flowing words of praise and that luscious looking piece you showed us, I think I've gotta make it!

    As far as eating pie for breakfast, remember: Life is short; eat dessert first. ;o}

  • I hate buttermilk but this is one of my favorite pies, this almost sounds exactly like mine but I put nutmeg grated on top of mine instead of cinnamon, but my eggs are separated, you add the yolks like yours. but then you save the whites beat them and fold in at the last. looking back though mine only has one cup sugar, 2 cups buttermilk, 1/2 stick butter, and then 3 eggs separated and beaten, 1/4 tsp salt, and 3tbs flour. bake mine on 450 for 5 min then 350 for 40-50 min. You would swear there was lemon in this pie it has a faint taste of lemon, but there is none. 🙂
    directions for mine….mix sugar, flour , salt add beaten egg yolks, buttermilk, butter (melted) and 1 tbsp vanilla) with hand mixer on low, then fold in the beaten egg whites, pour into unbaked pie shell and bake. Not that anyone asked, but you might like to try., 🙂

  • This looks WONDERFUL. I’ve never been successful with pies,, so I gave up. But this…. I’ve pinned it so I can try it later. This looks and sounds delicious.
