Zucchini is one of those things that either won’t grow for you, or won’t stop growing. You’re either wishing it would produce, or trying to get rid of your crazy extras by hiding a few on your neighbor’s porch or in the back or a friend’s truck at church. Thankfully my family will never get sick of zucchini because we’ve discovered chocolate zucchini bread.

Besides being delicious, it’s a great way to use up those monster zucchinis. You know, the ones that were baby sized when you looked yesterday, and today they’re big enough to play baseball with?

Chocolate Zucchini Bread is a tasty way to make use of those giant zucchinis that grew overnight in your garden...or were dropped off by your neighbor.

Yeah. Those. Grab one and make a few loaves of chocolate zucchini bread.

And you really will have to make a few loaves. Or like, eight loaves. Because if you have teen boys in your house (like me) you will go into the kitchen to cut yourself a slice of yummy bread and find out they’ve already devoured four loaves of it.

Boys. Sigh.

Chocolate Zucchini Bread is a tasty way to make use of those giant zucchinis that grew overnight in your garden...or were dropped off by your neighbor.

Ingredients for Chocolate Zucchini Bread

2 cups sugar

1 cup oil

3 eggs

3 tsp vanilla

2 1/2 cup flour

1/2 cup cocoa powder

1 tsp salt

1 tsp baking soda

1 tsp cinnamon

1/4 tsp baking powder

2 cups zucchini, grated

Instructions for Chocolate Zucchini Bread

In a large bowl beat the sugar, oil, eggs, and vanilla until smooth. In a separate bowl, combine all of the rest of the ingredients (except for the zucchini). Then combine the dry ingredients with the wet ingredients.

It’s going to be really thick. You’re going to think you did something wrong.

But then you’re going to add the grated zucchini…

And then the consistency is perfect.

Divide this mixture between 2 greased and floured loaf pans.

Bake for at 350 for 50-60 minutes.

    Love all of these recipes they are just a delight with a cuppa coffee people beg me to make someone said no go buy one they are wonderful keep sending recipes I love it you’re by myself and I just enjoy cooking your recipes and then I guess eating them as well.
