Homemade Pancake Mix: Hearty and Filling!

I adore pancakes.

My favorite kind of homemade pancake mix to have on hand is a recipe that I think we found in an old issue of Backwoods Home Magazine many, many years ago. Our designated pancake mix container says “Backwoods Pancake Mix” but it also warns to be careful of the tick – which is family reference to the fact these pancakes are very filling and if you eat too many, you will feel like a big fat woodtick.

(I never said we were normal.)

The great thing about this homemade pancake mix…

We make a big container of this homemade pancake mix so it’s ready when we need it. 2 cups of this mix makes about twelve 4″ pancakes—which if you can believe it, is actually enough to feed the four of us.

The great thing about these pancakes (besides the fact they’re more hearty than a traditional pancake) is they’ve got a hint of nutmeg, which is a nice surprise to the flavor. Not overwhelming, just enough.

Also, my husband says pancakes made with this homemade pancake mix tend to be a little “drier” than a traditional pancake; if that isn’t your thing you can remedy the texture by adding a bit more liquid to the batter.

Tasty homemade pancake mix, no matter how you top it!

No matter what you put on top of your pancakes—maple syrup and butter, fruit and whipped cream, peanut butter and brown sugar—you’re bound to enjoy the flavor as well as the oomph that sticks with you. Ima tell you, I love me some pancakes—all you can eat pancake breakfasts could be my love language—but pancakes made with this homemade pancake mix? I can maybe eat three 4″ pancakes.

Hearty Homemade Pancake Mix

A great homemade pancake that's easy and filling!

Ingredients

Pancake Mix

  • 6 cups white flour
  • 6 cups wheat flour
  • 1 cup baking powder
  • 1 cup sugar
  • 1 Tbsp. salt
  • 1 Tbsp. nutmeg
  • 4 cups dry milk

When you're ready to make the actual pancakes…

  • 1 egg
  • 3 Tbsp. oil
  • 1 cup water

Instructions

To make the pancake mix

  1. Combine all pancake mix ingredients (flours, baking powder, sugar, salt, nutmeg, and dry milk) in a large bowl. Make sure they are well combined. Pour mix into a storage container with a lid. (We use a 21 cup Rubbermaid container.) Place in cool, dry place.

To make 12 – 4" pancakes…

  1. Place 2 cups of homemade pancake mix in a large bowl.

  2. In a separate bowl, combine egg, oil, and water.

  3. Gradually add egg mixture to pancake mix in large bowl, stirring after each addition.

  4. Fry on cast iron griddle (or similar) until golden brown on each side.
