As a kid, I hated almost all vegetables. If you wanted to have a chance at getting me to eat my veggies you could try corn…from a can…from the store…but other than that, I was not a fan. Veggies and me were so not BFFs.

Thank goodness our taste buds grow up and mature, because now I love veggies. I inhale my veggies. I can’t get enough of my veggies. I plant my garden, I eat my garden. Life is good.

Here’s one of my favorite ways to prepare fresh green beans. Maybe it will be a favorite of yours, too.

My favorite way to have garden fresh green beans? Easy. Oven Roasted Green Beans - a great way to enjoy your fresh bounty! - A Farmish Kind of Life

Ingredients for Oven Roasted Green Beans:

1/2 pound fresh green beans

1/2 large onion, thinly sliced

1 tsp garlic powder

1 Tbsp olive oil

1/2 tsp salt

1 Tbsp balsamic vinegar

What To Do for Oven Roasted Green Beans:

Preheat oven to 400. Wash beans and snap ends off. Spread the green beans in a single layer on a baking sheet. Lay onion slices over the top. Sprinkle with garlic powder and salt, and then drizzle olive oil over the top.

Roast for 10 minutes, stir, roast for 10 minutes more. Remove from oven.

Before serving, drizzle 1 Tbsp balsamic vinegar over the top; toss to coat.
