Slow Cooker Potato Soup

Sometimes you need a soup that’s fast to put together and can work its magic while you’re off doing other things. Today we're making super easy slow cooker potato soup!

Ingredients

  • 1/2 lb bacon, (cooked, drained, crumbled)
  • 32 oz chicken broth
  • 1/2 cup onion, chopped
  • 8 oz cream cheese, cut up
  • 10 oz can cream of chicken soup
  • 32 oz bag frozen shredded hashbrowns
  • salt and pepper, to taste

Instructions

  1. Fry the bacon if you didn't already. You can substitute cooked ham for bacon if you'd rather. Also, if you go to put this soup together and realize you forgot to fry the bacon, you can skip it. You can also add it as a garnish later. :)

  2. Combine all ingredients, put in slow cooker. Cook on low 8 hours.

  3. Garnish with shredded cheese, sour cream, green onions... anything you'd put on a baked potato!
