Sometimes you need a soup that’s fast to put together and can work its magic while you’re off doing other things. Today’s Crocktober Soup Series selection features something fabulous for your crockpot: Slow Cooker Potato Soup. It’s ridiculously easy, not to mention awesome to come home to at the end of a busy day.

What’s great about this soup is you can grab a bunch of ingredients, dump them all in the slow cooker, turn it on low, and go about your day.

If you don’t want to use bacon, you can use (cooked) ham. And if you’re in a hurry and realize you forgot to fry up the bacon, just make the soup anyway without bacon. You can add the bacon later as a garnish… or you can skip it all together (if you absolutely must.)

Slow Cooker Potato Soup

Sometimes you need a soup that’s fast to put together and can work its magic while you’re off doing other things. Today we're making super easy slow cooker potato soup!

Ingredients

  • 1/2 lb bacon, (cooked, drained, crumbled)
  • 32 oz chicken broth
  • 1/2 cup onion, chopped
  • 8 oz cream cheese, cut up
  • 10 oz can cream of chicken soup
  • 32 oz bag frozen shredded hashbrowns
  • salt and pepper, to taste

Instructions

  1. Fry the bacon if you didn't already. You can substitute cooked ham for bacon if you'd rather. Also, if you go to put this soup together and realize you forgot to fry the bacon, you can skip it. You can also add it as a garnish later. 🙂

  2. Combine all ingredients, put in slow cooker. Cook on low 8 hours.

  3. Garnish with shredded cheese, sour cream, green onions… anything you'd put on a baked potato!
